Calabazitas con carne--- otherwise known in my house as "Squashiladas".

Squash is cheap and plentiful, and I don't eat processed carbs but rarely.  My family often asks for enchiladas though, and I usually make extra mean sauce to freeze or for myself.  I don't do the tortillas, but i put the sauce over greens, or whatever leftover veggies I have.  Last week I made a new discovery which my son calls "Squashiladas", lol.

All you have to do is make calabazitas and add your left over enchilada meat.  It is delicious without the tortillas.

Ingredients:

Squash cubed ( I had yellow, zuchinni, and grey)
onion cubed
couple of cloves of garlic.
4 cans med green chile (not jalapenos) or as much fresh roasted or frozen green chile as you want.
olive oil, butter, or coconut oil
cheddar cheese, mexican cheese (asadero), or mixture -- grated
sea salt pepper,
Leftover enchilada meat (ground beef, pork, goat, etc. browned with comino (cumin), garlic, powdered red chile, salt, pepper, and oregano.
Red enchilada sauce which was with meat, or canned enchilada sauce.

Brown onions and garlic in pan I mix olive oil, a bit of butter for flavor and/or coconut oil.
Add squash and saute till almost tender.
Mix in chiles, leftover meat, and leftover sauce.
Many people add corn to their calabazitas... too many carbs for me most of the time, but it is delicious, especially cut off the cob.  Canned or frozen works too.
Stir till meat and sauce is warm, taste and add more pepper, salt, and chile or chile powder if needed.
Grate cheese to taste and let it melt= asadero and cheddar are the best, it makes a nice creamy dish.

Serve with a salad or for you carb eaters: spanish rice and beans.  Yummy!  You wont even miss the tortillas, but if you do, try fresh steamed corn on the side:  they are a treat.
