Have to use up alot of squash?  Here is a delicious pickle relish.  It is colorful and pretty and makes a nice gift.
The taste is quite different than my other squash pickle recipe.

10 cups summer squash.  Yellow or green zuchinni, crook neck, patty pan, grey or Mexican squash all work just fine.  I mix them for the pretty colors.
4 cups onion red, yellow, white or purple or a colorful mix.
1 large red bell pepper
1 large green bell pepper
3 cups apple cider vinegar
1 tbsp celery seed.
1/2 tsp plus a little pinch or mounded black pepper
1 tsp tumeric
1 tsp nutmeg
1 tsp dry mustard (mustard seed is ok too, but i add more) 
I like spicy pickles, so i "mound" all the measures a bit instead of exact Tbs.

Chop/cube the ingredients to the size you prefer.  I hand chop and cut @ 1/4 inch cubes-- I like it coarse and the colors and textures show up better.  My son likes it chopped very fine or food processed so it stays on his sausages better!

Mix all ingredients and bring to slow boil.  I simmer mine about 15 minutes and then can.  Fill in hot sterilized jars.  Wipe jar rims carefully and process in water bath canner 15 min (I'm fairly high altitude)... for me this cooks them enough to sterilize but doesnt' overcook the ingredients:  I like em crisp.
If lower altitudes, see squash pickle recipe for times.  I also put up several quarts of this in recycled jars or freezer jars to put right in the fridge-- Otherwise all my work canning the stuff is wasted because the boys open the jars and eat it right away.

This is a very pretty relish for a gift-- especially if you used the different colors of squash.

Let me know how u like it! I went to family reunion this weekend and everyone gobbled up my whole winter supply of relish, pickles, and some of the jams... I have lots of requests for more, and people been saying i should sell it... BTW.. be careful with the tumeric... A tiny bit too much will make it bitter. IT gives pretty color though. This week i am making more apple butter, peach and plum butter, and pickled okra. MMM MMM good
Got back from vacation and tomatoes had grown, i will have a big batch all at once it looks like, so i guess i might have enough to can after all.
